Took me a while to decide but I finally bought the Mercer Culinary M20707 Genesis 7-Inch Santoku Knife after seeing it recommended by several professional chefs online. It arrived promptly and my first impression was how solid it felt in my hand. After using it for about two weeks now, I can say it's made a real difference in my prep time. The sharp edge slices through vegetables like butter, even tomatoes without squishing them!

Only minor critique is that the handle could be slightly wider for those with larger hands like mine, but overall, this knife is fantastic and well worth the price. I've already started eyeing other knives from Mercer Culinary!
