Upgraded from my old Wüsthof to this Matsato Chef's Knife and it's been a game-changer! The Japanese steel is so sharp, it slices through veggies like butter. I love how it feels in my hand too - the octagonal handle is comfortable, even after prolonged use. Only minor critique is that the leather sheath could've been a bit tighter, but hey, at this price point, it's a steal!
