Not gonna lie, I almost didn't buy this Shun Classic Santoku Knife due to its price tag. But my old knife was beyond saving, so I took a chance. Boy, am I glad I did! The first thing that struck me was how insanely sharp it is right out of the box - it glides through vegetables like they're butter. I've never had a knife this good.

The handle, though, took some getting used to. It's lighter than I expected, and while it's comfortable in hand, the balance feels slightly tip-heavy at first. But once you adjust, it becomes an extension of your arm. My minor critique? The 'divots' on the blade aren't a gimmick - they're great for preventing food from sticking, but they do make washing a bit more thorough.

All in all, this Shun is a quality piece that's worth its price if you're serious about cooking. It's not just a knife; it's an upgrade to your kitchen experience.
