Finally replaced my worn-out sushi knife with this KYOKU Samurai Series Yanagiba. It's a game changer! The blade is insanely sharp - it glided through my fish like it was butter. I've tried cheaper alternatives before that felt more like sawing than slicing, but not this guy. The grip is comfortable too, even after chopping for hours (yes, I have no life). Only gripe? It's a bit on the heavier side compared to others I've used, which took some getting used to. But hey, you can't argue with that edge!
