I wasn't expecting much at this price point, but the Global Santoku knife has pleasantly surprised me. The knife feels incredibly light yet robust in my hand, which made chopping a breeze after just a few days of getting used to its hollow ground edge. I particularly loved how it handled herbs; their delicate stems were sliced effortlessly with no crushing or bruising.

My one minor critique would be the slight discomfort caused by the handle's pointed end resting against my middle finger while using a pinch grip, but it's not enough to deter me from reaching for this knife daily. For under $100, this Global Santoku offers excellent bang-for-buck, and I've come to rely on its sharpness and precision for all sorts of prep work.
